No Chicken, Rice, and Broccoli Here!!

Here are some recipes I use on a regular basis to avoid getting into food ruts with Body-for-Life.  These are all BFL authorized (or so I've been told).

Flex's Power Muffins (from Body for Life Mommies forum)

1 serving = 4 muffins

Preheat oven to 350 degrees

 

12 egg whites

1 1/2 cup oatmeal (dry, NOT instant)

1/2 cup cottage cheese

12 packages of Splenda (or 8 tbsp. granular)

1 tsp. cinnamon (or to taste)

1 tsp baking soda

Blend all ingredients in a blender.  Pour batter into 12 standard muffin cups sprayed with lots of Pam (they stick otherwise).  You will fill the cups all the way.  Bake at 350 degrees for 20-25 minutes.  These make a wonderfully portable meal.

Crustless Sweet Potato Pie (from Body for Life Mommies forum)

1 serving = 1 mini-loaf

Preheat oven to 375 degrees

 

1 medium size sweet potato

1/2 cup egg beaters (or 3 egg whites)

1 tsp. vanilla extract

1/4 tsp. each:  nutmeg, allspice, ginger

1 tsp. cinnamon

dash of cloves

1/4 cup sugar free maple syrup

1 package Splenda

Bake sweet potato in microwave.  Remove skin and mash in bowl.  Add remaining ingredients and mix well.  Pour into mini loaf pan sprayed with non-stick cooking spray.  Bake at 375 degrees for 45 minutes. Chill for at least an hour to set.  Note:  You can quadruple the recipe and pour it into a pie plate and divide into 4 equal servings.
